Coconut milk sometimes gets a bad press but it is in fact extremely healthy. Yes it’s full of fats and oils but they are good and not bad fats. Eating coconut milk in food can help lower bad cholesterol while promoting good cholesterol and boost your immunity too. The fatty acids in coconut milks are lacking in most Western diets – how do you think we Thai people get such amazing skin?
Tumeric is an excellent anti-inflammatory and can be taken to relieve allergy symptoms as well as arthritis (or any condition caused by excess inflammation). It is also a powerful anti-oxidant, that can protect the body from being damaged by toxins and free radicals. A yellow Thai curry a week helps keep the doctor away!
This deliciously fragrant herb has been used for hundreds of years in both food and medicine. Food as medicine is totally Thai – anyone with a cold or flu is always given Tom Yum Soup, which is full of lemongrass and so good at relieving symptoms it’s actually being studied by scientists!
Coriander is another herb (both seeds and leaves) that’s been used since ancient times as a medicine. Greeks and Romans used it to help with digestive problems and infections. It has the added benefit of being really yummy (and rather pretty scattered on top of our dishes!)
